I'm a hardcore Resident Evil fan, and yes there are differences between them.
There are too many differences between all six versions to name.

There are also 3 versions of the original Resident Evil (4 if you count the DS version)
I'll be suggesting them in the near future, each version has differences too.
Resident Evil (PS1) (original version, manual aim)
Resident Evil (Saturn) (extra mini game, double tyrant fight)
Resident Evil Director's Cut (auto aim, easy mode, arranged mode)

That's not likely to happen, newer games are usually the same on all platforms now.
The farther back in time you go, the more likely there were differences on each platform.
